Chocolate Chip Banana Bread



All hail this breakfast favourite! This Chocolate Chip version is moreish, perfectly sweetened and balances the chocolate and banana flavours superbly. Serve it with salted butter or as is, it’s a true winner guaranteed to please everyone!

Ingredients

  • 4 Bananas (ripe!)
  • 240g All-purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 180g Brown Sugar
  • 125g Unsalted Butter, at room temp
  • 1 tsp Vanilla Extract
  • 2 Eggs
  • 200g Chocolate Chunks or Chips
  • 1-2 tbs Demerara Sugar

Instructions

  • Pre-heat the oven to 170C. Prepare your baking tin by lining it with baking paper. Set aside.
  • Mash 3 of the ripe bananas and set aside. If you are using a chocolate block, cut in chunks and set aside.
  • In a clean bowl, use an electric handheld mixer to cream the softened butter and brown sugar together, until the mixture is light and fluffy. Add the eggs, one at a time, making sure to mix well between each addition. Add the vanilla extract and mix well again.
  • Sift in the flour, baking powder, cinnamon and salt. Mix until just combined. Add the mashed bananas and mix until just combined. Finally, fold in the chocolate chunks (keep a small handful aside to add on top).
  • Pour the batter into your prepared tin. Slice your remaining banana in half, lengthwise and place on top of the batter. Add your remaining chocolate chunks, placing them around the banana halves. Sprinkle 1-2 tablespoons of demerara sugar on top.
  • Bake in oven for 50-55 minutes. Let cool slightly before enjoying it all! :)

Tips & Notes

  • You can remove the chocolate chunks/chips from the recipe, if you prefer an OG Banana Bread.
  • Using ripe bananas is a must! This recipe contains less sugar than most recipes, so make sure your banana are ripe so you get the natural sugar from the fruits.
