Cinnamon Roll Cake



Cinnamon rolls but without the hard work! This very easy, very yummy traybake is bursting with all the great ‘cinny rolls’ flavours we all love: a light and fluffy vanilla sponge with a buttery cinnamon swirl, the whole topped with, of course, a luscious cream cheese frosting. Heavenly!

Ingredients

For the cake:

  • 210g All-purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 150g Caster Sugar
  • 2 Eggs
  • 1-2 tsp Vanilla Extract
  • 180ml Milk (full fat)
  • 115g Butter (melted)

For the cinnamon swirl:

  • 120g Butter (softened)
  • 120g Brown Sugar
  • 1.5 tbs All-purpose Flour
  • 2 tbs Cinnamon powder

For the frosting:

  • 150g Icing Sugar
  • 1 tsp Vanilla Extract
  • 150g Cream Cheese
  • 2 tbs Milk

Instructions

  1. Pre-heat oven to 180C. Prepare a square baking tin by lining it with baking paper. Set aside.
  2. Start by preparing your cinnamon swirl. In a medium bowl, add the softened butter, brown sugar, all-purpose flour and cinnamon powder. Your butter should be extremely soft so you can easily bring the ingredients together with a spoon/spatula, to form a paste. When combined and smooth, set aside.
  3. In a separate large bowl, whisk together the flour, baking powder, baking soda, salt and caster sugar. Then, add in the eggs, vanilla extract and milk, and whisk until the batter comes together. Finally, add in the melted butter and whisk again until smooth.
  4. Pour the batter into your prepared baking tin. Then, dollop the cinnamon paste onto your cake batter, use a chopstick or a knife to swirl the mixture all around the cake batter.
  5. Place in the oven and bake for 30-35 minutes.
  6. When your cake is done, remove from the oven and set aside to cool for 30 minutes. Remove from tin and set aside.
  7. Prepare your cream cheese frosting by adding icing sugar, vanilla extract, cream cheese and milk to a bowl. Using an handheld mixer, beat the ingredients together until nice and smooth. Place the frosting on top of your cake and devour immediately! Enjoy :)
