


Another easy and fruity bake, perfect for picnics, afternoon tea or parties! Buttery and crumbly base topped with a blackberry jam and golden flaked almonds and oats. A delicious bake which will have you coming back for more!
Ingredients
For the Topping:
- 150g Almond Flakes
- 50 g Oats
- 2 tbs Milk
- 60g Unsalted Butter
- 55g Caster Sugar
- 1 tsp Vanilla Extract
For the Base:
- 165g Unsalted Butter
- 110g Caster Sugar
- 2 tsp Vanilla Extract
- 250g All-purpose Flour
For the Blackberry Jam:
- 220g Blackberries
- 80g Jam (I used Strawberry)
Instructions
- Pre-heat your oven to 180C. Prepare a square baking tin, by lining it with baking paper.
- Start by preparing the topping. Add all the topping ingredients in a small saucepan over low heat. Mix regularly until the caster sugar and the butter are melted. Remove from heat and set aside to cool.
- For the base, start by creaming the softened butter, caster sugar and vanilla extract until light and fluffy. Fold in the flour and turn the mixture onto your prepared baking tin. Press the mixture down, ensuring it is levelled and spread all the way to the edges. Bake for 10-12 minutes and set aside to cool slightly.
- For the blackberry mixture, place the blackberries and jam in a bowl. Mix and lightly crush the berries. Spread the jam mixture onto your pre-baked base. Top with the almond mixture and bake for a further 25 minutes or until golden.
- Cool completely before slicing and eating. Enjoy! :)
