


The perfect morning / afternoon tea cake! This delicious one-bowl cake is filled with juicy plums and sweet almond flavours, and can be prepared in less than 20 minutes! This recipe will easily become a staple in any kitchen with its light and fluffy almond cake and juicy tangy caramelised plums. Scrumptious!
Ingredients
- 150g Unsalted Butter, softened
- 150g Caster Sugar
- 150g Almond Meal
- 80g All-purpose Flour
- 3 Eggs
- 1 tsp Almond flavour
- 2 tsp Vanilla Extract
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 7-8 Ripe Plums
- Flaked almonds
- Powdered sugar
Instructions
- Pre-heat oven to 170C. Line a round springform cake tin with baking paper. Set aside.
- In a large bowl, use an handheld electric mixer to beat caster sugar and softened butter until light and fluffy.
- Add vanilla extract and almond flavouring, mix well.
- Add eggs, one at a time, making sure to mix well between each addition.
- Add the almond meal, flour, baking powder, and salt to the bowl – fold gently with a spatula to combine all ingredients together.
- Chop four plums into cubes and gently fold them in the cake batter. Spoon the mixture into your prepared cake tin ensuring the batter is levelled.
- Finally, quarter the remaining plums and place on top of the cake in circles – press them slightly in the batter. Sprinkle 1-2 tablespoons of sugar and flaked almonds on top.
- Place in the oven and bake for 35-40 minutes. Set aside to cool. Dust with powdered sugar, before serving with ice cream or custard. Enjoy! :)
