


Peanut Butter and Jam, talk about the perfect combination of flavours! This easy bake combines a buttery peanut butter biscuit base, a generous layer of strawberry jam, and a delightful oat crumble topping. A moreish traybake which will have you come back for more!
Ingredients
For the base:
- 100g Unsalted Butter, softened
- 135g Peanut Butter, smooth
- 100g Caster Sugar
- 180g All-purpose Flour
- 1 tsp Baking Powder
- 200g Strawberry Jam
- 150g Strawberries
For the oat crumble:
- 100g Unsalted Butter
- 150g Rolled Oats
- 80g All-purpose Flour
- 80g Brown Sugar
Instructions
- Pre-heat the oven to 180C. Prepare a square baking tin by lining it with baking paper. Set aside.
- Start by making the base. In a clean bowl, use a handheld mixer to mix softened butter and peanut butter until combined.
- Add the caster sugar and mix again. Finally, add the flour and baking powder, mix well to combine. The mixture should be quite crumbly.
- Place the mixture in your prepared baking tray, making sure to spread evenly and press it down to smooth the top. Bake in oven for 10 minutes.
- When your base is baked, take it out of the oven and set aside. Mix the chopped strawberries and the jam in a small bowl and spread the mixture all over the base. Make sure to spread it equally and all the way to the sides.
- Finally, prepare your oat crumble. In a clean bowl, place the butter, oats, flour and brown sugar. Use your fingers to pinch and mix the ingredients all together. After a couple of minutes, the mixture should be ready, with a crumble like consistency.
- Sprinkle your oat crumble on top. Bake in the oven for another 25 minutes or until the top is golden.
- Let cool in tin, then remove from tin to cut into squares. Enjoy! :)
