


Juicy and tangy raspberries meet velvety white chocolate, and the rest is history! This blondie is a snack made in heaven, the perfect combination of chocolate and berries in a delicious blondie form. Very easy to bake and even easier to devour with friends and family!
Ingredients
- 220g all-purpose flour
- 200g brown sugar
- 170g unsalted butter, melted
- 2 eggs
- 1 tsp vanilla extract
- ¼ tsp salt
- 180g white chocolate chips or chunks + extra for topping
- 150g raspberries
- 2 tbs raspberry jam
Instructions
- Pre-heat oven to 180C. Line a square baking tin with baking paper. Set aside.
- In a large bowl, place the melted butter and brown sugar. Use a whisk to mix the ingredients together. Whisk in the eggs and vanilla extract.
- Fold in flour and salt. Fold in the white chocolate chips and half the raspberries.
- In a separate small bowl, combine the remaining raspberries and the jam, gently squishing the berries with the back of your spoon. Mix well and set aside.
- Pour the blondie mixture in your prepared baking tin and spread evenly to the sides. Dollop the raspberry jam mixture onto the blondie batter, and use a knife or a chopstick to create swirls. Sprinkle additional white chocolate chips.
- Place in the oven and bake for 25 min. Cool completely before cutting into chunks. Enjoy! :)
